Preparing Masala Paste

Ingredients Include

  • 2 large onions chopped
  • 6 green chillies chopped
  • 1 large piece of ginger chopped
  • A few cloves of garlicĀ  chopped
  • A bowl of coriander leaves
  • A bowl of mint leaves

Method

  • In a mixer jar, add chopped onions, green chillies, ginger, garlic, coriander leaves, and mint leaves.
  • Grind to a fine paste without adding water. Set aside.

  1. Boil the eggs with 1 teaspoon of salt for about 20 minutes.
  2. Once boiled, remove the shell and set aside.

Cooking Egg Curry

  1. Heat oil in a wide pan or kadai.
  2. Add whole spices and shahi jeera.
  3. Add the prepared masala paste and cook for 10 minutes on medium flame, until it darkens.
  4. Add turmeric powder, coriander powder, cumin powder, garam masala powder, and salt. Mix well.
  5. After 5 minutes, add whisked curd and cook for another 5 minutes until the oil separates.
  6. Pour in water, mix with the masala, and simmer for 10 minutes.
  7. Add sugar (if using) and mix well.
  8. Make cuts on boiled eggs and add them to the masala. Toss gently to coat.
  9. Garnish with chopped coriander leaves, cover, and simmer for 5 minutes.
  10. Finally, add fresh cream. Mix well and turn off the heat.
