Making Masala Powder

  1. Dry roast the peppercorns, cumin seeds, fennel seeds, cinnamon, cardamom, and cloves in a pan over medium heat.
  2. Saute for 1 to 2 minutes until fragrant.
  3. Allow the roasted ingredients to cool completely.
  4. Transfer the cooled ingredients to a mixer jar and grind into a fine powder.
  5. Set aside.

  1. Heat a pan and add 3 tablespoons of oil.
  2. Add finely chopped garlic and green chilies. Saute for a few seconds.
  3. Add thinly sliced onions and saute until golden brown.
  4. Optionally, add fresh curry leaves for aroma.
  5. Add finely chopped tomatoes and saute for 2 minutes until they turn soft.
  6. Season with salt, turmeric powder, and red chili powder. Mix well.

Incorporate the Rice & Egg

  1. Create a well in the center and add 1 tablespoon of oil.
  2. Crack open the eggs and gently drop them into the well.
  3. Sprinkle salt, pepper, and red chili powder over the eggs.
  4. Cover and cook for 1 minute.
  5. Gently mix the eggs to scramble them.
  6. Incorporate the masala into the scrambled eggs and cook for 2 more minutes.
  7. Increase the flame to medium and add 1 teaspoon of the prepared masala powder.
  8. Add cooked basmati rice and finely chopped spring onions or coriander leaves.
  9. Mix gently until well combined.
