Step By Step Mode
1st Marinade

  1. In a bowl, combine the salt, crushed peppercorns, and lemon juice.
  2. Marinate the fish fillets with this mixture and set aside for around 10 mins.

2nd Marination

  1. Fine chop the garlic cloves.
  2. Prepare the sauce mix by combining red chili flakes, dark soy sauce, red chili sauce, finely chopped garlic, and refined oil.
  3. Spread the 2nd marinade evenly on both sides of the fish fillets.
  4. Set aside for 30 mins.

Soy Sauce  -  1 tbsp
Red Chilli Sauce  -  1 tbsp
Garlic  -  1 tbsp
Grilling the Fish

  1. Preheat the grill pan and brush it with 1 tsp oil.
  2. Place the fish fillets side by side on the grill pan and grill on medium heat for 5 mins.
  3. Turn over the fish fillets and spread the remaining marinade on top.
  4. Grill the other side for 2 mins on medium heat.
  5. Flip the fillets again and reduce the heat to low.
  6. Baste the fillets with the oil/marinade on the grill pan and grill for 2 mins.
  7. Repeat the same on the other side again for 2 mins on low heat.
