Prepare the Mixture

  1. In a large bowl, combine the mashed sweet potatoes, cooked kodo millet, barnyard millet, and foxtail millet.
  2. Add the chopped green chillies, onion, red chili powder, garam masala powder, coriander powder, cumin powder, turmeric powder, salt, chaat masala, chopped coriander leaves, and mint leaves.
  3. Squeeze the juice of a lemon over the mixture and mix until everything is well combined.

Shape & Coat the Cutlets

  1. Take small portions of the mixture and shape each into a ball.
  2. Flatten each ball lightly to form a cutlet shape.
  3. Place the semolina on a large plate.
  4. Coat each cutlet evenly with semolina on all sides.
