Boil water

  • In a saucepan, bring 1 cup of water to a boil over medium flame.

Prepare the dough

  • Once the water starts boiling, add 1 cup of bajra flour, 1/2 teaspoon turmeric powder, 1/2 teaspoon Kashmiri chili powder, 1/2 teaspoon freshly ground black pepper, 1/4 teaspoon pink himalayan salt, and 1/4 teaspoon dry mango powder (if using).
  • Stir the mixture well with a wooden spoon until it forms a thick dough. This should take about a minute.

Kneading the dough

  1. Transfer the dough to a mixing bowl or a flat surface and knead it until it becomes smooth and pliable.
  2. You might need to sprinkle a little more bajra flour if the dough feels too sticky.

Shape the rotis

  1. Divide the dough into small, equal-sized balls (about the size of a lemon).
  2. Flatten each ball slightly and dust with a little bajra flour to prevent sticking.
  3. Using your palms, pat the dough balls into thin, round rotis.
  4. You can also roll them out gently with a rolling pin between two sheets of plastic or parchment paper to get an even thickness.

Cook the roti

  1. Heat a tawa or a flat griddle over medium-high heat.
  2. Place a rolled-out roti on the hot tawa. Cook for about 30-40 seconds on one side or until small bubbles start to appear.
  3. Flip the roti and cook the other side for another 30-40 seconds.
  4. Press gently with a cotton cloth or spatula to ensure it cooks evenly and puffs up.
  5. Once both sides are cooked, brush with a little ghee or oil.
